Crispy Matar Bonda

Ingredients
Matar 1 kg
Choppped Onion 1 cup
Chilli flakes 1/4 tsp
Rye 1 tsp
Mustard seed 1 tsp
Coriander powder 1 tsp
Cumin powder 1 tsp
Hing 1 tsp
Chopped Garlic 1 tbsp
Chopped Green chilli 1 tbsp
Red chilli powder 1 tsp
Amchur powder 1 tbsp
Curry leaves 20-25
Chopped Ginger 1 tbsp
Kashmiri red chilli powder 1 tbsp
Salt to taste
Besan 1 cup
Coriander leaves 1 cup
Suji 1/2 cup
Fruit salt or Eno 1 tbsp
Method
Peel, wash Matar. Chop Onion, Coriander leaves, Garlic &Ginger Make paste of Matar till fine.
Take a pan, add Oil 1/4 cup in it, then add Rai, Mustard seed, Garlic , Ginger, Curry leaves & Green chilli in it and saute for 1 mins.
Then add Hing in it and saute for 30 secs.
Now add Matar paste in it and cook it till dry.
After 5-6 mins, add all powdered spices and Salt to taste in it & mix well.
Cook for 10 mins more or till dry.
After 10 mins, Matar is ready, leave it to cool down.
For Batter Take a bowl, add Besan, Siji, Salt and Coriander leaves , mix well.
Then add Water in it as needed and whisk well, then leave it.
Now Matar paste has cooled down, make ball of it as lemon size.
Add Eno in the battar and whisk, slightly. Then dip Matar ball in the battar to coat ball well.
Meanwhile heat Oil in a Kadhai on medium flames. Place bonda in the Oil and fry till golden both sides.
Repeat process for all balls
Matar bonda is ready to serve with mint chutney or Ketchup.
