Hara Chana Chholey

Ingredients:
2 cups fresh green chickpeas (Rinse green chickpeas thoroughly and soak overnight for best results)
2 onions, finely chopped (Finely chop onions, green chilies, and cilantro before starting cooking.)
2 tomatoes, pureed (Prepare tomato puree by blending fresh tomatoes until smooth)
2 green chilies, finely chopped
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon garam masala
Salt to taste
Fresh cilantro for garnish
2 tablespoons cooking oil
Directions:
Heat oil in a pan and add cumin seeds. Let them splutter.
Add chopped onions and sauté until golden brown.
Stir in ginger-garlic paste and green chilies, cook until fragrant.
Pour in tomato puree and cook until oil separates. Add turmeric, coriander powder, and salt. Mix well.
Add green chickpeas and stir to coat with spices.
Pour water enough to cover the chickpeas and let it simmer until they are tender.
Sprinkle garam masala and garnish with fresh cilantro before serving.

Cooking Time: 30-40 minutes
