Hara Chana Kebab
This recipe is for Hara Chana Kebab, also known as green chickpea cutlets or kebabs. These flavorful and healthy fritters are a great vegetarian option packed with protein and perfect for a snack or light meal.
Ingredients:
2 cups dried green chickpeas (hara chana), soaked overnight and boiled
1/2 cup chopped red onion
1/2 cup chopped fresh coriander leaves (cilantro)
1/4 cup chopped mint leaves
1 inch grated ginger
1 green chili, chopped (optional, adjust for spice level)
1 teaspoon garam masala powder
1 teaspoon coriander powder
1/2 teaspoon cumin powder
1/2 teaspoon turmeric powder
Salt to taste
2-3 tablespoons gram flour (besan) or breadcrumbs for binding
Oil for shallow frying
Instructions:
Prepare the Chana: Drain the soaked and boiled green chickpeas. You can mash them slightly with a fork or pulse them a few times in a food processor for a coarser texture.
Combine the Ingredients: In a large bowl, combine the mashed chickpeas, chopped onion, coriander leaves, mint leaves, ginger, green chili (if using), garam masala, coriander powder, cumin powder, turmeric powder, and salt.
Bind the Mixture: Add the gram flour or breadcrumbs a little at a time until the mixture binds well and can be formed into small patties.
Shape the Kebabs: Take small portions of the mixture and shape them into flat patties or small balls.
Shallow Fry: Heat oil in a non-stick pan or skillet over medium heat. Once hot, gently add the kebabs and fry until golden brown from both sides, about 3-4 minutes per side.
Serve Hot: Drain on paper towels to remove excess oil.
Serve hot with your favorite chutney or dipping sauce, such as green chutney, tamarind chutney, or yogurt dip.
